Taffy Apple Salad

Ingredients
4 cups diced apples
8 oz. can crushed pineapple, drained-reserve juice
4 oz. cool whip
½ cup sugar
1 tbs. flour
1 egg – beaten
2 Tbs. apple cider vinegar
1 cup (or more) salted peanuts

Directions
In sauce pot, over medium heat, cook together flour, sugar, pineapple juice, vinegar and egg until thickened. Refrigerate until cool.
In large bowl, add fruit and mixture, fold in cool whip and ½ cup nuts.
Sprinkle remaining nuts on top.
