Apple and Toasted Pecan Salad with Poppy Seed Dressing

Salad Ingredients
6 cups chopped romaine lettuce
¾ cup peeled, chopped apple (honey crisp/braeburn)
6 tbsp chopped pecans, toasted
¼ cup dried cranberries
¾ cup mandarin oranges, drained
Dressing Ingredients
1/3 cup sugar
2 ½ tsp dry mustard
½ tsp salt
3 tbsp white or rice wine vinegar
2 tbsp chopped onion
1/3 cup olive oil
2 tsp poppy seeds


Directions
Blend sugar, mustard, salt, vinegar and onion in blender or food processor until sugar is dissolved. Slowly mix in oil and poppy seeds.
Mix salad ingredients together in bowl, and serve salad with dressing on the side
